Introduction

This recipe is from the 17 day diet. I substituted Gardein chicken (less) breasts since I do not eat chicken and vegetable broth instead of chicken broth. Ingredients

    1 cup chopped up raw okra
    1 cup chopped raw celery
    1.5 cup chopped raw red cabbage
    1 cup chopped raw carrots
    1 cup chopped raw red onion
    1 can organic vegetable broth
    1 can organic crushed tomatoes
    1 bag (4 pieces) of Gardein veggie Chicken-less breasts
    salt and pepper to liking

Directions

Remove frozen Gardein chicken (less) breasts from freezer and set aside to thaw.
Slice up all the veggies and put them into a large sauce pan with salt and pepper. Using a food processor to cut up the veggies will save you lots of time.
Once ingredients are all added, add the vegetable broth and the crushed tomatoes.
Cube all 4 of the Gardein chicken (less) breasts. Add to pot. Simmer for approx 10 minutes or until veggies are to your liking. (I like them a little crunchy)
