    1 C dried green lentils
    1/2 C dried pearled barley
    1 C tomato, diced
    .5 C edamame, shelled
    3 T chopped cilantro
    1.5 T olive oil
    Salt & Black Pepper to taste (and any other herbs or spices--I use some dill and cayenne as well)


Cover lentils & barley overnight with water. Drain and transfer to a large bowl. Combine with other ingredients.
