Introduction

Low Fat, High Protein, one-dish meal for the whole family. Low Fat, High Protein, one-dish meal for the whole family.
Number of Servings: 6

Ingredients

    2 15 ounce cans black beans, drained and rinsed
    2 15 ounce cans sweet whole kernal corn, drained
    2 10 ounce cans crushed green chile peppers
    2 cups salsa
    6 corn tortillas
    1 lb. extra lean (95% fat free) ground beef or chuck
    1 cup fat free shredded cheddar cheese
    Salt, pepper, and seasonings to taste.

Directions

Preheat oven to 350 degrees.
Line a 2 quart baking dish with tortillas.
Brown the ground beef, drain, and spread over tortillas.
Mix beans, corn, green chiles, and salsa in a bowl and pour over beef and tortillas.
Bake covered on center rack of oven for 30 minutes.
Spread cheese over the top of the mixture, and bake uncovered for 10 minutes or until the cheese is melted.
Remove from oven, allow to cool for 5 minutes and serve.

    i tried this after i had the side dish version (black bean bake) its really good! i still added some chile powder to add a lil spice, but it didnt really need it :) - 6/29/11
