Introduction
This just screams summer to me. I eat this whole bowl as a main course. The best part is it is so filling and only 280 calories for the entire bowl. This just screams summer to me. Ingredients

1 medium ear corn
3 ripe plum tomatoes or cup of cherry tomatoes
1 cucumber
5 fresh basil leaves
1 T extra virgin olive oil
.5 T balsamic vinegar****
sea salt/pepper/garlic powder to taste
***to be 100% Raw skip balsamic and use a half fresh squeezed lemon
Directions
1. De-cobb the corn and place in a big bowl.
2. Dice up the tomatoes and add to bowl. If using cherry tomatoes just cut in half.
3. I cut the ends of the cucumber off but leave the skin on because that is where most of the vitamins are. Cut cuke in half lengthwise and quarters if you like. Slice thin and place in bowl.
4.Take the basil leaves and place one on top of the other. Roll them up into a tight little cigar. Slice into thin threads. You just did a chiffonade. It's pretty, right?
5. Add the rest of the ingredients and mix well.
**** Optional Add Ins
chopped sweet red pepper
sliced onion
avocado cubes
Just remember to calculate the add ins into your Tracker.
