A super light pasta dish for summer. Olive oil, red wine vinegar, and seasonings make a tangy dressing for cucumbers and pasta. Ingredients

    1 box (16oz) Rigatoni pasta (can use penne or other similar size)
    1 large cucumber, quartered and sliced
    2 med scallions (green onion) sliced thinly
    6 Tbsp extra virgin olive oil
    6 Tbsp red wine vinegar (sparks only has cider vinegar listed)
    1 Tbsp sugar
    1/2 tsp garlic salt
    1/4 tsp dried mint

Directions

Cook and drain pasta according to directions. Rinse to cool quickly. In the meantime, quarter and slice cucumber and slice scallion. In a large salad bowl, Mix together the vinegar, sugar, garlic salt, and mint. May use more seasonings to your taste, but it will alter the nutritional value. Slowly whisk in the olive oil. Toss in the drained pasta, cucumber, and onion. Refridgerate until well chilled, 1-2 hours, or prepare 1 day ahead for best flavor. Serve with extra mint and vinegar on top for extra zing. Enjoy!
