Introduction
My grandmothers recipe for Pork pie My grandmothers recipe for Pork pieNumber of Servings: 8
Ingredients
-
Ground Pork, 1 pound
Mashed Potatoes, 5 cups
Onions, raw, .3 cup, chopped
Saltine Crackers (Saltines), 6 cracker
Sage, ground, 2 tbsp
Salt, 1 tsp
Pepper, black, 1 tbsp
Pie crust, ready-to-bake
Directions
Pre-heat oven to 375.
Cook onions and pork in skillet, once pork looks done I add 1/2c. water and let that evaporate. At the same time I make a batch of mashed potatoes (I use low fat milk and butter - this cal amount is already added in). Once pork mixture is ready crumble 6 saltine crackers in (this allows any fat to be absorbed).
Start folding the mashed potatoes into the pork mixture. I do this with about one cup at a time, you do not want too many potatoes or you will lose the flavor. It is usually 4-5 cups. Now is time to add the sage. sprinkle generously on top of mixture; add to taste. Fill a pillsbury type "roll and go" pie, add pie top. place in oven and cook until pie is done (I go by the box). This recipe is set at eight slices
