Introduction

This came about when I wanted something pesto-y and quick, but had no pasta in the house. It's quite filling, but so delicious it's hard not to go for seconds. Number of Servings: 6

Ingredients

    2 cups dry whole wheat couscous
    2 cups water
    4 tbsp Earth Balance Natural Buttery Spread
    1 tsp Salt
    6 roma tomatos, chopped
    leaves of 6 sprigs of fresh Basil, chopped semi-fine
    6 garlic cloves, crushed or minced
    1/2 cup extra virgin olive oil


Directions

Combine water, buttery spread, and salt in a sauce pan and bring to a boil. Remove from heat and stir in couscous. Cover and let stand for 5 minutes. In salad bowl, mix couscous, tomatoes, basil, garlic, and olive oil.

Serving Size: Makes about 6 servings
