An excellent soup for any time of year. The delicate and fresh taste of cilantro makes this soup a pleasure to eat. Lentils and kale are both packed with nutrients so it's good for you!!! Number of Servings: 8

Ingredients

    3 Large Carrots, chopped
    1 Large Onion, chopped
    1/3 Stick of Butter
    1 Cup Lentils (brown/green)
    4 Cups Chicken Broth/Stock
    2 Cups Kale (green-a whole bunch)
    Cilantro, FRESH (6 tbsp to the whole bunch)

    *Salt, Pepper to taste
    *Sriracha sauce is good in this too

Directions

In a large stock pot melt butter. Add chopped onions and carrots at a medium-low heat. When the onions soften add the lentils and chicken broth/stock. Bring to a boil and then simmer for 20 minutes. Add a large bunch of kale. Continue to simmer for 15 minutes. When ready to serve add chopped fresh cilantro. The cilantro makes the soup so make sure it's fresh!!!

Serving Size: Makes 8 1-cup servings
