Ingredients

    Brown Long Grain Rice - 2 cups uncooked
    Water - 4 cups
    Bell Pepper - 1/2 cup chopped
    Onion - 1/2 medium chopped
    Garlic - 2 large cloves minced
    Roma Tomatoes - 3
    Salt and pepper to taste

Directions

Heat Oil. Brown uncooked rice 10-15 minutes until toasted. Add onion, bell pepper and garlic. Saute until onions are sweated. Add tomatoes, water and salt and pepper to taste. Simmer on medium-low until cooked stirring occasionally.

Serving Size: makes about 6 3/4 cup servings
