Ingredients

    2 pounds extra lean ground beef
    1 cup unsweetened applesauce
    1 medium onion, finely diced
    1 medium green pepper, finely diced
    6 slices Arnolds Health Nut bread, crumbled
    1/4 cup egg substitute
    salt and pepper to taste

Directions

Preheat oven to 350 degrees. Combine all ingredients, knead mixture until blended. Pack into loaf pan. Bake two hours. If desired, pour 1/2 cup of tomato sauce over top of loaf before baking (not included in nutritional analysis). Serves 8.
For Crock Pot: Pack into bottom of pot, cover and cook on high for one hour. Lower to low and cook for six to eight hours. Lift out of pot, slice and serve.

    Incredible!
    Great meatloaf and so versatile. Used venison sausage in place of the ground beef & topped it w/ tomato sauce - even more flavor. Didn't quite finish it off, so we crumbled up the last of it in a veggie soup. - 1/10/11
