Introduction

This is a large batch of coconut carrot soup cooked without oil. This is a large batch of coconut carrot soup cooked without oil.

Ingredients

    1.5 lbs raw fresh carrots, sliced
    1 tbsp curry powder
    1tbsp ginger root
    1 clove garlic
    .5 C light coconut milk
    6-8 C water

Directions

In a large soup pot, cook ginger & garlic on medium heat until soft and fragrant.

Add carrots, curry powder, water and bullion to ginger and garlic.

Turn heat to High and allow to boil.

Cook until carrots are tender.

Puree, add coconut milk and serve.
