Ingredients

    1 block extra firm tofu, drained and pressed between towels to remove excess liquid
    1 egg
    1/2 cup panko breadcrumbs (processed to fine texture)
    1 cup barbeque sauce
    Cooking spray

Directions

Preheat oven to 375 degrees. Cut tofu into 8 small slices. Bake in oven for 10-15 minutes to remove even more liquid. Remove and allow to cool, but turn broiler on. Meanwhile, mix egg in a shallow dish with 1 Tbs of the barbeque sauce. Add bread crumbs to a second shallow dish. Heat a nonstick frying pan coated in cooking spray over medium high heatWhen tofu is cool enough to handle, dip in egg mixture and then roll into bread crumbs. Add to frying pan and cook until both sides are golden, about 5 minutes. Dip slices into remaining barbeque sauce and place on a broiler pan. Broil until sauce just starts to carmelize (this will depend on the amount of sugar in your sauce, but it took mine about 5 minutes).
