Introduction

This is a delicious concoction that can be eaten in a number of ways! I've had it mixed with whole grain pasta, smothering a grilled chicken breast, and even alone! Number of Servings: 8

Ingredients

    1 package Frozen Spinach
    4 cloves garlic
    1 can diced tomatoes
    1 T Olive Oil
    4 oz Feta Cheese

Directions

Thaw spinach and dry as much as possible. In a large pot, add garlic and spinach and saute 2-3 minutes.

Add can of tomatoes and saute for another 2-3 minutes.

Add cheese and stir thoroughly, keeping on heat for another minute.

Remove from heat and add to chicken, whole grain noodles, eat as it is or use your imagination! :)

Serving Size: Makes 8 0.5-cup servings
