Ingredients

    2 cups cooked brown rice
    8 oz. cooked edamame, out of the shell
    6 oz. feta cheese, crumbled
    10 kalamata olives (pitted), halved
    1/4 cup unsweetened dried cranberries
    1/4 cup lemon juice
    2 tbsp. extra virgin olive oil
    Dash of salt/pepper
    Dash of red pepper flakes
    2 tbsp. minced fresh cilantro

Directions

Using already cooked frozen brown rice (or you can cook your own), take 2 cups and thaw in the microwave. Add to a large bowl. Cook or thaw edamame according to package directions (mine called for boiling in salted water for 2 minutes until done, but I steamed them with some water in the microwave instead). Add cooked edamame to bowl with rice. Add feta cheese, dried cranberries, and halved kalamata olives to the bowl. In a separate smaller bowl, add lemon juice, olive oil, salt, pepper, and red pepper flakes and whisk together. Pour dressing over rice mixture and mix well. Sprinkle in cilantro and reserve some for the top.

Makes approx. 6 1/3-cup servings.
