Ingredients

    2 Tble olive oil
    1 tble lemon juice
    1/2 tsp salt
    pepper to taste
    2.5 cups prepared quinoa (according to package)
    1/2 cup diced red onion
    1 cup cherry tomatoes, cut in half
    1/2 cup sliced zucchini
    1/2 cup chopped red pepper
    2oz "Manchego" soy cheese, shredded
    1 tsp dried oregano

Directions

-Wisk oil and lemon juice with oregano, salt and pepper; set aside
-mix rest of ingredients
-add dressing to salad and mix well

Serve chilled or room temp.

Makes about 9-10 1/2 cup servings
