Introduction

Ingredients

    1/2 cup butter
    1 cup sugar
    2 eggs
    3 medium, over-ripe bananas

    2 cups A/P flour
    1 tsp baking soda
    1/2 tsp baking powder
    1/2 tsp salt

Directions

Preheat oven to 350 F - rack in centre of oven

cream butter and sugar together - add eggs and beat until batter is smooth. Mash bananas well and add to batter.

Combine flour, salt, baking soda and baking powder together. Add to wet mixture and stir until just combined.

Place batter in prepared loaf pan and bake for 1 hour. Cool on rack. Let rest for 5 or 10 min before removing from pan.

Serving Size: Makes 12 slices - 1 slice per serving
