Ingredients

    2 cups instant rice (uncooked)
    1 chicken bouillon cube
    2 cups frozen peas
    2 cups cooked shrimp
    3 tbsp olive oil

Directions

Boil the water to cook your rice in a large skillet, but add the chicken bouillon cube to the water and dissolve before adding the rice.

While the rice is cooking, boil the 2 cups of frozen peas in 1 cup boiling water for 3-4 minutes and remove the tails from the shrimp.

Drain the peas.

Remove the lid from the rice and add the peas, the shrimp and the olive oil. Return the skillet to high heat and cook for just a few minutes until the shrimp is heated through (if using frozen cooked shrimp) and you get a consistency you like.

You can add a little soy sauce if you'd like, but the chicken bouillon adds a nice flavour on its own!

Serving Size: Makes 5 servings, slightly larger than 1 cup each.
