Introduction

Ingredients

1/2 cup warm water
2 tsp yeast
1 tsp sugar
4 1/2 cups flour
2 tsp salt
1 tbsp olive oil
1 1/4 cups warm water
Directions
Sprinkle yeast on the 1/2 cup of warm water (check instructions on yeast package for temperature) and sprinkle the sugar on the yeast, stir gently. Let sit about 15-20 minutes, until foamy.
Measure flour, salt and oil into a large bowl. Add yeast mix and remaining water and stir.
Scoop dough onto counter and knead for about 5-8 minutes. Round into a ball and place back into bowl. Cover with cling film (plastic wrap, whatever) and let rise in a warm place for about an hour.
With a knife or large metal spatula divide dough into 4. Round into balls and flour well then cover and let rise about 1/2 hour.
Spread over pizza pan, top then bake at 400ºF for 20 minutes.
Makes 4 8-12" pizzas (depending on desired thickness of crust)
*After you divide the dough following the first rise you can put the portions into large ziploc bags and put them in the refrigerator for later use. I've done this and kept them for over a week with no problems/going bad. Remove bag from refrigerator and leave out at room temperature several hours until dough becomes easily workable. (You may need to dust the dough with flour again when removing from the bag)
