Ingredients

1 egg, beaten
3 Tblsp milk
2 Tblsp Torani Sugar Free Vanilla Syrup
2 Tblsp Canola Oil
3 Tblsp Multi-grain pancake mix
2 Tblsp unsweetened coconut
1 Tblsp Sugar Free lemon pudding mix, dry
1/4 tsp poppy seeds
1 scoop vanilla protein powder
pinch salt
Directions
In a measuring cup or microwave safe mug, Mix egg, milk, syrup and oil and combine thoroughly.
In a separate bowl, mix pancake mix, coconut, protein powder, pudding mix, poppy seeds and salt. Tip dry into wet and stir till combined. Nuke in microwave for 2 minutes to 2 minutes, 20 seconds. Let it sit for three or so minutes (it pulls away from the sides) before tipping the cake onto a plate.
Serving Size: Makes 4-5 slices
