Ingredients

    8 cups broccoli crown, chopped to bite size pieces (about 4 crowns)
    1/2 cup red onion, chopped
    2/3 cup raisins
    2/3 cup cashew pieces

    3/4 cup light mayo (such as Kraft Olive Oil reduced fat)
    1/4 cup plain nonfat yogurt
    1 Tbs sugar
    2 Tbs apple cider vinegar
    1 tsp salt
    1 tsp pepper

Directions

Chop veggies and mix in raisins and cashews in a large bowl. Mix together dressing ingredients in a small bowl. Combine and refrigerate for at least 1 hour before serving to allow broccoli to slightly soften.
