Introduction

Thanks to a generous anonymous soul, a basket full of fresh garden-grown zucchini were present for the taking this morning in our kitchen. I had just stopped by our local organic Potomac Vegetable Farms and picked up a bunch of warmly-hued flowers, freshly-laid eggs, cucumber, black cherries, swiss chard and squash the other day. Ingredients

    Zucchini, 2 cup, sliced
    Summer Squash, 2 cup, sliced
    Onions, raw, 1 small
    Spinach, fresh, 1 cup
    Whole Foods Fire Roasted Salsa Verde - 30 grams, 2 tbsp
    Salt, 1 tsp
    Paprika, 1 tsp
    *Extra Virgin Olive Oil, 1 tbsp

Directions

Toss ingredients into a bowl. Mix everything together to get the oil and salsa evenly distributed. Pour the medley into a dutch oven and simmer. Serve over jasmine rice, with more sea salt. Add light dusting of paprika for additional color and flavor.

Serves at least 2!
