Number of Servings: 4

Ingredients

    7-8 small red potatoes (approx. 1000 grams)
    1 Bay Leaf
    1tbsp. Kosher Salt
    1/2 cup skim milk
    1 tbsp. Smart Balance Light Buttery Spread with Flax Oil (or similar light butter spread)
    1tsp. Black Pepper

Directions

1) Rinse and quarter potatoes. Place in large pot, covering with water. Add salt and bay leaf. Cook on med-high for 20 or until tender.
2) Turn off heat, drain potatoes, and place back on burner. Add milk and butter. Mash with potato masher or whisk. Add pepper to season, serve immediately.

*May add roasted chopped garlic, chives, bacon, etc to additionally season.
