Ingredients

1 roasted red bell pepper, chopped
1/2 cup chopped onions
2 cloves garlic, minced
1 Tbsp + 1 tsp skim milk
3 oz Neufchatel Cheese (Farmer's Cheese)
1 cup cooked whole wheat pasta
Directions
1. Roast pepper on the grill or in the oven broiler, let cool and peel skins.
2. Begin cooking pasta according to package directions.
3. Chop roasted pepper.
4. In the natural oils from the pepper, saute chopped pepper, garlic, and onion over medium heat .
5. Mix skim milk and farmer's cheese in a small bowl with a whisk or fork. Spoon in hot pepper mixture and blend.
6. Stir onion and pepper cheese mixture into al dente cooked pasta and serve with favorite seasonings/cheeses.
Suggestions: Parmesan, ff feta, ground black or white pepper, rooster sauce, Tabasco, etc.
Red bell pepper used in this recipe is freshly roasted. Cooking time includes pepper roasting time.
