Introduction

Ingredients

    2 cups white flour
    1/2 cup buckwheat flour
    1/2 tsp baking soda
    2 tsp baking powder
    1/2 tsp salt
    2 eggs
    1/4 cup olive oil
    2 1/2 cups rice milk

Directions

Combine the 2 cups of white flour, 1/2 cup of buckwheat flour, 2 tsp of baking powder, 1/2 tsp of baking soda, and 1/2 tsp of salt and mix well. Add 2 eggs, 1/4 cup olive oil (or oil of your choice) and 2 1/2 cups of milk (we use the rice milk because of lactose issues). Mix well. Lightly spray the frying pan one time with your favorite spray. I use a 1/2 cup measuring cup and fill it to about 1/4" from the top for each pancake. Makes 18 - 4 1/2" - 5" pancakes. Usually 2 of these pancakes are enough to fill us up when served with fruit.
