Introduction

Number of Servings: 1

Ingredients

    - 1 lb Raw Andouille Sausage (could also use Chorizo or Ground Beef)
    - 1 tbsp olive oil
    - 1 yellow onion
    - 3 ribs celery
    - 1 bulb garlic (or 5 frozen garlic cubes)
    - 1 bell pepper
    - 1 can tomatoes with green chilies
    - other veggies as desired (calories calculated with one med zuchinni)
    - Salt, pepper, paprika, cayenne pepper, cumin and chili powder to taste
    - 3 cups cooked brown rice

Directions

1. Start rice cooker if rice is not yet cooked.

2. Roughly dice all vegetables into small pieces.

3. Brown the sausage or ground beef, using the spatula to break it into small bits.

4. Add onions, celery and bell pepper and saute for about 7-10 minutes over medium heat.

5. Add garlic, spices and additional veggies (except tomatoes) and continue to cook for 5 more minutes.

6. Add tomatoes with liquid and continue to cook for 5 minutes (or until rice is done).

7. Fold in cooked rice and serve with hot sauce if desired.
