Introduction

This is an easy, yummy potato salad with the fun addition of bacon. My kids just LOVE it! This is an easy, yummy potato salad with the fun addition of bacon. My kids just LOVE it!
Number of Servings: 5

Ingredients

    5 c. Red potatoes, cubed
    4 oz. Sweet pickles, diced (3-4 depending on size)
    1 c. Fat Free Mayonnaise (16 Tbsp.)
    2 Hard boiled eggs, diced
    1 Tbsp. Onion, minced
    2 tsp. Yellow mustard
    1/2 tsp. Black pepper
    1/4-1/2 tsp. Paprika
    6 slices Low sodium bacon, cooked and crumbled

Directions

Boil potatoes until soft but not mushy. Drain and place in a large bowl or shallow baking pan. Make sure they are no more than three layers thick. Place potatoes in the freezer until chilled, stirring once. 

While potatoes are cooking and chilling, mix all other ingredients in the bowl you will serve your salad in. Add potatoes and stir gently. 

Sprinkle a little bit of paprika on top for color, if desired.
