Ingredients

    1/2 cup black-eyed peas, frozen
    1/2 cup french cut green beans, frozen
    1/2 cup corn, frozen
    1/2 can black beans, rinsed
    Add the following to taste:
    Lemon juice
    Chopped green onion
    Chopped cilantro
    Salt

Directions

Cook black-eyed peas in boiling water for about 5 minutes, or until they begin to soften. Add corn and green beans, cook for 2-3 minutes longer. Meanwhile, drain and rinse canned black beans. Stir all above ingredients together and put in refrigerator to cool, about 5 minutes. Add cilantro, green onion, salt, and lemon juice to taste. Note--don't be shy on the lemon juice, it's really what makes this yummy!
