Introduction

An extremely portable dessert for those people on the go, to eat in the car or while shopping. An extremely portable dessert for those people on the go, to eat in the car or while shopping.

Ingredients

    1 cup Smucker’s Natural Peanut Butter (half a jar)
    ¼ cup granulated Splenda
    ¼ cup granulated Stevia
    1 tsp vanilla extract
    2 eggs
    1/2 tsp baking soda
    1/2 cup almond flour

Directions

1. Preheat oven to 325 degrees F. Cover a cookie sheet with parchment paper.
2. Cream peanut butter, Splenda and vanilla in mixing bowl.
3. Add eggs, almond flour and baking soda to the mixture.
4. Form 12 rounded discs and place on parchment paper pan. Mark with criss-cross pattern with fork tongs. Cookies will not spread much while baking.
Bake @325 degrees for 10-12 minutes.
Makes 12 cookies.
