Introduction

Quick and easy Mexican-style breakfast, made with eggs, ham, and salsa. Quick and easy Mexican-style breakfast, made with eggs, ham, and salsa.
Number of Servings: 1

Ingredients

    2 Corn Tortillas (regular size, approx. 6" each)
    2 large Eggs, whisked
    1/2 cup diced Ham
    2 Tbsp fresh Salsa

Directions

Pan fry the diced ham in a small skillet for about 1 minute.

Add the salsa and the eggs and scramble all together until the eggs are thoroughly cooked, another 3 minutes or so.

Warm the tortillas, either heated on a griddle or nuke in the microwave for approx. 20 seconds.

Place the mixture in the two tortillas and enjoy!

Serving Size: Makes 2 breakfast tacos
