Ingredients

5 eggs
2 slices of parma ham
2oz or 50g of low fat feta cheese
3/4 cup purple sproating broccoli
1/2 a large red pepper
3 spring onions
seasoning and herbs to taste
change the veg to taste
or change the parma ham for smoked salmon
or just make veggie ones
Directions
preheat oven to 180 degrees C
Finely chop all the veggies
slice or rip the parma ham into little strips
lightly grease a muffin tray
whisk the eggs up
crumble in the feta
add parma ham, and finely chopped veggies
add seasoning and herbs
pour into 9 sections of the muffin tray
bake in the over at 180 degrees C for about 15 mins
they are done when the egg is cooked and the top is slightly golden
