Really nice chunky flavoursome salad I gained from videojug.com. Really easy to prepare, and easier on the waisteline too. Number of Servings: 2

Ingredients

    Half each of Green, yellow, red, orange pepper usually only 2 colours but you can adjust to your liking.
    1/4 cup of red onion sliced,
    2 roma or similar vine tomatoe cut into chunks,
    approx 1/4 cucumber peeled and cut into chunks also
    about 16 black or green olives or to your liking
    about 2 desert spoons of nice flavoured virgin olive oil
    2 tsp oregano or herb of your choice
    cracked black pepper
    Feta cheese or greek salad cheese.

Directions

Chop all ingredients eccept for olives and onion into good sized chunks place in large dish. Slice onion and add to dish, Add oregano, pepper and olive oil, and toss to coat. When ready to serve add fetta cheese.
Enjoy.
