Introduction

It's getting to that time of year where leaves change, apples are an abundance,crisp air and best of all the smell of fall. To me the smell of fall is baked pumpkin, apple pie and warm comfort food. Well we can have that in a more healthy way! Get that oven heated and try some yummy Pumpkin Granola! Take your fall apple, put on some Peanut Butter and top with some pumpkin granola! This granola is awesome with oatmeal, yogurt or by the handful! Great source of fiber and protein!! By the way, Holy Mother of Pumpkin! This is so good and clumpy!!! Enjoy!! Ingredients

    3 cups old fashioned oats (not instant)
    2 cups spelt flakes (or use 2 more cups of old fashion oats)
    1cup of puffed rice cereal
    1 cup pumpkin seeds

    1 Tablespoons vanilla
    pinch of salt
    1 tablespoon pumpkin pie spice
    1/4 Tbsp. Cinnamon
    1/4 Tbsp. of nutmeg
    1/2 cup puree organic canned pumpkin
    1/4 cup brown sugar
    1/4 cup maple syrup
    1/4 cup unsweetened apple sauce
    1 cup raisins or dates, or combo of both

Directions

Preheat oven to 325 degrees.

Combine oats, pumpkin seeds, salt and spices..

In a separate bowl, combine pumpkin,maple syrup, apple sauce, brown sugar and vanilla, mix well. Add wet mixture to oat mixture.

Line a large sheet pan with wax paper or parchment paper. Cook for 30-45 minutes, flipping granola every 15 minutes.

Allow granola to cool completely. If granola is still a little soft, cook for additional 10 minutes. This should dry out the granola perfectly. Once granola is cooled, add raisins and dates.

ENJOY!!

Makes 10 1/2cups
Calculation is by half cups
