Introduction

Ingredients

    1 oz cream cheese, softened
    1 large egg
    1.5 - 2 tsp granulated zero calorie sweetner (or the liquid equivalent thereof, 15 drops)
    1/4 tsp vanilla extract
    Dash of cinnamon
    Dash of salt
    1 Tbs ground flax meal
    1 tsp. baking powder
    7 blueberries, fresh or frozen

Directions

1. Spray a medium-sized microwave-safe cereal bowl with cooking spray. Place cream cheese in bowl & microwave on high for 20 seconds to soften.
2. Add all other ingredients except blueberries & and beat very well with fork until creamy.
3. Use a small rubber spatula to scrape down the sides of the bowl so that all the batter is in the bottom of the bowl. Dot with blueberries.
4. Microwave for 2 minutes on high (rotate (do not stir!) every 30 seconds if your microwave doesn't have a turntable).
5. Run a small rubber spatula around the danish, then under it to release from the bowl & transfer to a small plate. Cool until just warm before eating.

Save time by mixing these dry ingredients in advance:
2 lb. package of Bob's Red Mill Organic Gluten-Free Whole Ground Golden Flaxseed Meal
11 Tbs. aluminium-free baking powder
1/2 c. cinnamon
1 Tbs. pure stevia extract (powder)
1 Tbs. salt

Mix thoroughly & store in an airtight container. To prepare one serving, mix 2 Tbsp. of this mix with one beaten large egg, 2 oz cream cheese, 1/4 tsp vanilla extract, & 13 blueberries, following directions above.
