Number of Servings: 8

Ingredients

    Bow tie pasta
    Zuchinni
    Mushrooms
    Carrots
    Celery
    Onion
    potatoes
    Chicken breast
    Greek Yogurt
    I Can't Believe It's Not Butter Spread/regular
    Water
    salt
    Misc spices to taste

Directions

Dice all veggies, salt and spices except potatoes and place in large soup pot. Add 8 cups water and bring contents to boil. Add 7 oz of chicken breast and continue to boil until chicken is cooked. Add greek yogurt and butter spread and return to boil. Add pasta and diced potatoes, cook til done.
I used leftover boiled potatoes and added them in last appx 10 minutes of cooking. I garnished soup with 1 TBLS of Feta Cheese. Served with reduced fat corn bread! YUMMY!
