Introduction

Number of Servings: 4

Ingredients

    2 cups of left over chicken (chopped)
    1/2 Red Bell Pepper (chopped)
    1/2 Green Bell Pepper (chopped)
    1 Small Red Onion (chopped
    1 Apple Peeled, cored & chopped (preferably red)
    Juice of 1 lemon
    2 Tbsp of Mayonaise (for less calories use light)
    Pepper & salt to taste

Directions

Remove bone and skin from your left over baked chicken. This can be done the same day you baked your chicken or the day after. Chop the chicken pcs on a cutting board and place in a large bowl large enought to hold chicken and all the other ingredients.

Add the other ingredients leaving the apple for last so that it doesn't turn brown. Stir and mix all the ingredients well.

Serve alone or over chopped romain or spring mix.
