Great salsa with tons of fresh veggies in it. Great salsa with tons of fresh veggies in it.

Ingredients

    Dressing:
    juice from 2 limes
    1 clove garlic, smashed
    1/3 c. virgin olive oil
    1/4 c. red wine vinegar
    1/4 tsp. chili powder

    Salad:
    1 can yellow corn, drained
    1 can black beans (drain half of the juice)
    1/2 cup diced red, or yellow peppers
    1/2 red onion chopped
    1 c. tomato chopped
    1/4 c. cilantro chopped
    2 tsp. kosher salt
    ground black pepper to taste
    cumin to taste

Directions

combine all ingredients together. For best taste, let sit for half hour to let flavors enhance
