Introduction

You can probably make this recipe with any meat, I just happen to have chicken more often than not. I made this up off the top of my head, so feel free to tweak! Number of Servings: 6

Ingredients

    1lb Chicken
    1 Tbsp Extra Virgin Olive Oil
    1 medium green bell pepper, shredded or diced
    1 Cup Carrots, shredded
    1 Cup Mushrooms, shredded or diced
    4 Scallions, diced
    3 Cloves Garlic, minced
    3 Tbsp Lite Soy Sauce
    1-2 tsp Rice Vinegar
    1/4 tsp Ground Black Pepper
    1/4 tsp Ginger
    Ground yellow mustard and red chipotle pepper seasoning to taste

    1 Head of Lettuce

Directions

1. Sauté chicken in olive oil until cooked. Take out and set aside to cool.
2. In the same pan, saute the scallions and garlic. Add the soy sauce, vinegar, and spices and simmer slightly.
3. Either dice or shred the chicken, then add to the pan.
4. Slowly mix the bell pepper,carrots, and mushrooms into the pan - making sure everything is covered in the sauce. Keep the mixture on simmer until it is al heated.
5. Serve on lettuce leaves/cups.

Serving Size: Makes 6 equal servings

    This was delicious and a welcome help as I'm doing the 17 Day Diet.
    I've lost 20 lbs to date. This will help me to maintain. I did add zucchini.

    This was so easy and so good!!!! YUM! I sauteed the veggies along with the scallions and garlic in the 2nd step, and also didn't use the mustard because I didn't have any. It was amazing! - 4/17/13
