Ingredients

    6 tsp (2 tb) rice wine vinegar
    6 tsp (2 tb) splenda
    3 tsp (1 tb) garlic, minced
    3 tsp (1 tb) dijon mustard
    1 tsp ginger root, minced
    salt and pepper, to taste

    ~2 cups (1 bag) shelled edamame, steamed and cooled
    1 medium cucumber (preferably English) - seeded and cubed
    1 bunch scallions (about 1 cup) - chopped
    1 red (yellow or orange) bell pepper - diced

Directions

Makes about 6 half-cup servings

For dressing:
Combine vinegar, splenda, garlic, mustard, ginger, salt and pepper. Adjust to you taste...I like it kind of tart, if you want it sweeter add more splenda.

Combine edamame, cucumber, red pepper and scallion in a bowl. Add dressing and mix to combine. Chill about an hour or overnight.
