Ingredients

    3 tbsp. olive oil
    1 1/2 c. chopped onion
    1 c. chopped celery
    1 c. chopped carrots
    6 clove garlic, minced
    10 c. chicken broth/ 3 Knorr condensed broth packets & 10 c. water
    8-10 medium potatoes, cut into cubes
    1 pound Italian sausage, cooked
    1 large bunch kale or spinach

Directions

In large pot cook onion, celery and carrots in olive oil for about 15-20 minutes or until onions have sweated. Add broth, garlic and potatoes. Bring to a boil and simmer for 20-25 minutes. Add sausage and kale; cover and simmer until kale is soft.
