Number of Servings: 6

Ingredients

    20 oz ground turkey
    2 tsp olive oil
    1 large red pepper
    1-8 oz mushrooms diced
    1-large onion
    1-32 oz v8 juice or tomato juice
    1-8 oz can diced or crushed tomatoes
    1 tsp cumin
    1/8 tsp cayenne pepper

Directions

Brown turkey in 2 tsp olive oil until no longer pink about 5 min. Take turkey out and drain. Add onions, peppers and mushroom, cook for 5 min until softened. Add back in turkey, and other ingredients. Simmer for 20 minutes.

Serving Size: makes 6- 1.5 cup servings
