    1 eggplant. sliced in circles in 12
    1/2 cup of pasta sauce tomato and basil
    2ozs of parmesan cheese,

Directions

preheat oven 400 spray cookie sheet. slice eggplant into 12 slices then place on sheet then spray eggplant. let roast for 30 min , take out and put sauce on the eggplant and sprinkle the cheese on top. roast another 10 min or until cheese is melted. serve warm, with your choice of meat. or eat alone. very good
