Ingredients

8 Mission Yellow corn tortillas
2 10oz cans Old Elpaso enchilida sauce
1/2 small onion, chopped
1 tbs olive oil
2 15oz cans black beans, rinsed and drained
1 pkg Birds Eye Steamfresh gold and yellow corn, prepared according to package directions
1 1/2 cup fat-free cheddar cheese, shredded
1 med avacado, peeled and sliced
1 cup tomato, chopped
1 cup lettuce, chopped
1/2 cup Pace Salsa
Directions
Saute onion in olive oil. Rinse and drain beans. Mix onion, beans, corn and smal amount of enchilida sauce and heat on stovetop. Fill each tortilla with above ingredients and cheese in equal parts. Spray baking dish with olive oil spray. Roll each tortilla and top with remaining enchilida sauce and any remaining cheddar cheese. Bake 350 oven for about 30 minutes or until heated through. Top with lettuce, tomato, and fresh avocado, if desired.
