This is a super quick healthy taco replacement. This is a super quick healthy taco replacement.

Ingredients

    Red Ripe Tomatoes: Roma Tomatoes
    Red Bell Peppers, 1 cup, strips
    Chicken Breast Skinless, 1 large breast
    Philadelphia Cooking Creme: Santa Fe Blend, 2 Servings
    Butter, salted, 1 tbsp

Directions

Take the chicken breast and cook it whole with 1 Tbsp of butter. Cook thoroughly then use two forks to shred the chicken. Dice the Roma Tomato and the Red Bell Pepper. Then add the chicken, tomato, bell pepper, and Philadelphia Cooking Creme: Santa Fe Blend to a skillet. Cook until hot. Then add into a Taco Shell.

I top this with a little bit of fat free mexican blend cheese. I have also been known to add a little sour creme to the mix of chicken.
