Ingredients

1 c. oat bran
1 c. millet flour
2 Tbsp cinnamon
1tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1 c. light agave nectar
1/4 c. brown sugar
1/4 c. canola oil
1 c. unsweetened applesauce
3 Tbsp ground flax mixed with 6 Tbsp water
1 1/4 c. peeled and finely grated sweet potota
1 1/4 c. finely grated zucchini
Directions
Preheat oven to 375.
Spray 12 muffin tins with non-stick spray.
Sift first 6 ingredients in a medium bowl.
In a separate, large bowl beat nectar, sugar, oil, applesauce, vanilla, and flax mixture 'til combined.
Fold in dry ingredients 'til just barely combined.
Fill muffin tins.
Bake for 30 minutes or until an inserted toothpick comes out clean.
Serving Size: Makes 12 muffins
