Number of Servings: 4

Ingredients

    Mixed lettuce 4 cups
    Capsicum 100gm diced
    Cucumber 100gm diced
    Carrot 100gm diced
    Sweet potato 100gm diced
    Fetta 100gm diced
    Sundried tomato 100gm thin strips
    Bacon 100gm diced
    Chicken 100gm diced
    Eggs x4 diced not to small

Directions

Turn oven onto 180 degrees Dice sweet potato and lightly spray lay onto baking tray cook for about 35 mins or untill cooked.
Meanwhile split the lettuce between 2 bowls and dice all ingredients. 50gm per bowl .
Boil eggs, Cook chicken and bacon can season chicken if you like.Once cookeded split between the two bowls and add sweet potato and egg.
Add what ever dressing you like.
