It's a really yummy breakfast food with WAY fewer calories thatn a regular omelete! It's a really yummy breakfast food with WAY fewer calories thatn a regular omelete!

    2 - 3 Fresh Egg Whites
    1/2 Cup Fresh diced tomatoe(s) (cherry or regular)
    1/4 Cup Fresh diced Bell Pepper (Your Preference)
    1 pinch of Mrs. Dash Garlic and Herb! (This Adds some flavor, no calories but it is optional)

    You can totally use other vegetables, but the calorie amount will change! Your favorite is what counts!


1) Take fresh Egg Whites and whisk until foamy. *Hint* if you angle the bowl slightly to the side and use a fork it is easier to whisk!*

2) Pour the Foamy egg whites onto skillet or pan and begin dicing peppers and tomatoes.

3) When the egg is 2/3 of way cooked to desired consistency, add the pinch of seasoning and add the peppers and tomatoes or other desired vegetable(s).

4)Fold in half or desired omelete-fold style in the pan! *I find it easier to flip up 2 sides and bring to the middle resulting in a fancier look!

5) Grip pan handle, and gently tipping, slide the omelete off the pan and onto plate!

    I made this using an egg substitute equalling 2 egg whites and added a whole egg ; I also added 1/4 cup chopped onion; very tasty and a nice starting point for additional variations; thanks for sharing! - 1/20/08
