Introduction

Ingredients

    Dough Base
    1/4 cup margarine
    3/4 cup granulated sugar
    2 eggs, separated
    1 1/2 cup all purpose flour
    1 tsp baking powder
    1/2 cup milk ( I used 1%)

    2 cups of plums, pitted and cut in half.

    Streusal Topping
    1/2 cup granulated sugar
    1/2 cup all purpose flour
    1/2 teaspoon baking powder
    2 Tbsp butter
    milk just to add moisture if need to crumbs.

    Grease a 9 inch or 2.5 liter cake pan.
    in a large bowl cream together margarine, sugar and egg yolks until fluffy. Combine flour and baking powder; beat into egg mixture alternately with milk. Beat egg whites until stiff but not dry; fold into batter. Turn into prepared pan. Halve and pit plums and arrange over the top of the dough.
    In a small bowl, combine sugar, flour, baking powder and rub in the butter to make coarse crumbs or struesel. Add a few drops of milk if needed for extra moisture. Spread thickly over the fruit and back at 350 F for 35 to 45 minutes or until top is golden and toothpick inserted into cake comes out clean.
