Number of Servings: 8

Ingredients

    Veal (cubed for stew) 1 lb.
    Organic Low Sodium Chicken broth - 4 cups
    Water - 4 cups
    2 cups fresh or frozen peas
    3 cups frozen corn
    3 cups frozen shelled edamame
    3 cups baby carrots
    1 large sweet potato
    1 extra large potato
    1.5 cup chopped celery
    1 cup diced onion
    1.5 cup cornstarch

Directions

brown veal in pam/nonstick pan
transfer to crock pot.
Add liquids and vegetables. Season to taste. And let cook for at least 4 hours on high. Add cornstarch mixed with a small amount of water in the last hour to thicken.

I used bay, tarragon, rosemary, thyme, pepper. Salt can be added at the table for those NOT maintaining a low sodium diet.

Serving Size: Makes 8 1.5-cup servings
