Ingredients

1 cup pumpkin puree
.5 cup cottage cheese (nonfat)
4 cups of water
2 tsp vanilla extract
2 cups of oats (not the quick-cook type)
1 tsp baking powder
4 dashes of salt
4 tsp cinnamon
4 tsp ground ginger
Directions
Combine all wet ingredients in a large mixing bowl.
Place dry ingredients, except ginger, into a small bowl. Mix.
Mix dry ingredients with wet. Stir in ginger.
Bake in oven-proof dish at 350 degrees for 30 minutes.
Serve.
