Ingredients

    3 1/2 cups pumpkin puree or one 29 oz can
    1 can Thai Kitchen Coconut milk, about 1 2/3 cups
    1 qt. low sodium vegetable stock
    1 large onion, quartered
    1 apple, quartered
    1 T honey
    1 T ginger paste, or minced ginger
    1 t cinnamon
    1 t cumin

Directions

Put everything in Vitamix and blend.
